  2. Mexican Manicotti

    1 lb. ground beef
    1 can refried beans
    2 1/2 tsp. chili powder
    1 1/2 tsp. cumin
    8 oz pkg. of shells
    2 1/2 c. water
    16 oz. salsa
    2 c. sour cream
    1 c. shredded cheese
    1/4 c. green onions
1 sm. can chopped or diced black olives

Combine uncooked beef, beans, & spices. Spoon into uncooked shells. Arrange in greased 13x9. Combine water & salsa and pour over stuffed shells, cover and refrigerate overnight.

Remove from fridge 30 minutes before baking. Keep covered and bake for 30 minutes at 350* for 1 hr. Uncover, top with sour cream, cheese, onion, and olives; bake until cheese is melted.
